Our “Gluten Free, Lactose-Free” Journey
During our junior year in high school, we started suffering from – severe stomachaches, bloating, headaches and fatigue. Not realizing what the issue was, we visited many doctors. Eventually, we found a naturopathic doctor, who diagnosed us with gluten and lactose intolerance. We had no idea what that meant. It was just unheard of.
As high school students, 17 years old, it was devastating. It was a huge surprise and shock. It meant no more wheat noodles, no more ice cream, no more brownies, no more dim-sum. But we ignored it and kept eating everything that was terrible for us.
After graduating from high school, we went onto serving full-time missions for our church. With the change in lifestyle and rigorous schedule, we became considerably sick from the way we were eating. At this point, we were forced to acknowledge that it was time to make changes in our lives. At first, it seemed impossible because not only did it mean changing the way what we ate but even the way we cooked. We struggled through a long period of time, especially with our cooking disasters. We had to start from ground zero experimenting with healthier products; healthier recipes; fresh foods and raw cooking.
Now it has been less than a year since our decision to maintain a clean eating diet. Everyday we are still learning. Our kitchen now has become our laboratory. We still make mistakes and we still fail. We have created dishes that are absolutely inedible. But our passion and resolve to cook nutritious dishes that can taste amazing has only grown stronger.
