Spicy Pork Bulgogi with Kiwi-Apple Kimchi (GF, Oil-Free)

Ingredients
  • 1 lb Pork, thinly sliced
  • ½ large onion, thinly sliced
  • Marinade:
  • 1½ tbsp Kikkoman GF Soy Sauce (If using Chinese Soy, use less & adjust to taste!)
  • 3-4 tbsp Gochujang (our GF gochujang (recipe here)or storebrought)
  • 1 tbsp honey
  • 3 cloves garlic, minced
  • ½" ginger, finely chopped
  • ½ kiwi (or 3 tbsp SunGolden Kiwi), mashed
  • Kiwi-Apple Kimchi:
  • 1 small apple, julienned
  • ½ cucumber
  • ¾ tsp rice vinegar
  • ½ cup kimchi, drained
  • 1½ Zespri Sungolden kiwi
  • Serve with: Toasted Sesame Seeds, Lettuce, White/ Brown Rice
Instructions
  1. Kiwi- Apple -Kimchi: Cut your apple into thin strips (julienned).
  2. Take your cucumber and remove the mushy, inner core. Slice finely into thin strips (the same length as the apples).
  3. Mix in the chopped kimchi and rice vinegar.
  4. Slice the remaining kiwi into strips and gently combine. Be careful not to break it up.
  5. Allow it to sit in the fridge to marinate while you prepare the pork.
  6. Spicy Pork: Cut a kiwi in half, reserve half the kimchi and mash the rest. Add to a bowl with all the marinade ingredients.
  7. Add in the pork and onions to marinade.
  8. In a HOT non-stick skillet, add the pork and onion. Make sure you keep turning so you don't over cook! Once the pork is no longer pink, remove from heat and serve with baby gem lettuce, rice and the Kiwi-apple-kimchi.
