Skinny Pulled Orange Chicken (Paleo, GF, Oil-Free)

- 3 lbs boneless, skinless chicken thighs
- 1½ cup orange juice (4 oranges)
- ½ cup lime juice (4 limes)
- 2 tsp cumin
- 2 tbsp chili powder
- 8 cloves garlic, minced
- 1-2 cups Chicken Broth/Water
- 1 tsp pepper, 1 tsp sea salt
- First trim off any excess fat from the chicken. Cut into 2" chunks.
- Mix all the ingredients together (except the chicken and the chicken broth).
- In a large heavy bottom pot/wok, put the chicken in and pour over the marinade.
- Add the chicken broth/water - just enough to cover the chicken.
- Bring everything to a boil. Then simmer on low for an hour or until the chicken is tender.
- Remove the chicken and shred. Set aside.
- When ready to serve, heat up the marinade with a little water and pour into a separate bowl to serve alongside the chicken.

Layer 1: Tortillas (GF, Paleo)
Layer 2: Shredded Lettuce
Layer 3: Pulled Orange Chicken (above)
Layer 4: Guacamole (DEFINITELY MUST HAVE)
Layer 5: Our Vegan Yoghurt Dressing/Ranch Dressing (!!!!)
Layer 6: Fresh Coriander
Chicken Thighs: You can use chicken tenderloins or even breast, but we personally prefer a more tender cut.
