Choco-Banana "Nice" Cream Sandwiches (Grain Free, Vegan, Refined-Sugar Free)

Ingredients
  • Cookie:
  • 1 (15oz) can Black Beans, drained
  • 2 tbsp coconut oil, melted
  • 1 tbsp coconut flour
  • ⅓ cup maple syrup
  • ⅓ cup Cocoa Powder
  • 1 tsp vanilla
  • 2 tbsp flaxmeal
  • ⅓ cup Dairy-Free dark chocolate chips + more for toppingIce-cream:
  • 3 Bananas, sliced and frozen for at least several hours
  • 1 tbsp maple syrup
  • 1 tsp vanilla
  • 2 tbsp almond milk (or any milk of choice)
Instructions
  1. Cookies: Preheat oven to 350 F.
  2. Blend together flax meal, maple syrup and vanilla.
  3. Add the remaining ingredients (except for dark chocolate chips). Blend till smooth.
  4. Mix in your chocolate chips with a spatula.
  5. On parchment paper lined tray equally divide the batter into 10 cookies. Use the back of a spoon to smooth out the top and flatten the cookie (so you get that crispy cookie). Add a couple more chocolate chips for the top.
  6. Bake for 12-15 minutes in the oven. Allow it to cool completely (20 minutes).
  7. Place in fridge or freezer till ready to serve (this will help firm up the cookie so its easier to handle).
  8. Ice Cream: In a blender, blend bananas, maple syrup, almond milk and vanilla together till you get a nice smooth consistency.
  9. Serve immediately with cookies - and make your ice cream sandwiches!
Notes
Flax meal substitute: 2 eggs or 2 tbsp chia seeds

TIPS for the NICE CREAM:
Use ripe bananas that haven't turned brown.
Peel the banana and slice. Place in a ziplock bag and freeze for at least a couple hours before using.
Try consuming the nice cream immediately or within the first 2 days for a creamier ice cream.
Use full fat coconut milk - the addition of fat breaks down ice crystals.
