30 minute Thai Basil Chicken & Coconut Cauliflower Rice (GF, Paleo, Oil-Free)

Ingredients
  • ¼ of a head of cauliflower
  • 2 tbsp of coconut milk (or more)
  • 1 small chicken thigh/ chicken breast (200g)
  • 5 cloves of garlic, minced
  • 1 tsp oyster sauce
  • 1 tsp GF Soy Sauce
  • ¾ tsp honey/ coconut sugar
  • Lots of fresh basil leaves
  • Chili Flakes
Instructions
  1. Rice: In a blender, pulse cauliflower florets OR chop finely until you get something that resembles breadcrumbs.
  2. Heat a dry non-stick pan over medium heat. Add your cauliflower rice.
  3. After 2-3 minutes, add in the coconut milk. Once the cauliflower is cooked through and soft, take out and dish onto a plate.
  4. Thai Basil Chicken: Mix oyster sauce, soy sauce and sugar in a bowl.
  5. Slice you chicken into small bite sized pieces.
  6. In a hot non-stick pan, add your garlic into the hot pan. Stir-fry for 20 seconds.
  7. Add your chicken in in a single layer (or else the chicken starts to stem). The pan should be hot enough so the chicken chars almost immediately.
  8. After all the sides are nicely brown and slightly charred (2 minutes), add in the sauce mixture. Stir-fry till chicken is cooked and sauce has thickened. (if too dry add a little water).
  9. Stir in the basil leaves and chili flakes. Taste and adjust.
  10. Serve with cauliflower rice and a fried egg.
Notes
Paleo: For oyster sauce substitute check out this recipe. Substitute coconut aminos for soy sauce. You may have to adjust seasoning.

Traditional Method: Thai Basil Chicken usually is made of diced up chicken breast stir-fried in a mixture of light and dark soy, with a generous addition of thai holy basil. Unbeknownst to most people, there are actually 3 kinds of basil used in thai cooking: Thai Sweet Basil (horapha), Thai Holy Basil (kaphrao) and Lemon Basil (maenglak). This particular dish calls for thai holy basil which is in fact a little peppery and even slightly hot. It's leaves are very, very fragrant and imparts a distinct flavor.
