Mum's Fragrant Cantonese Chicken & Mushroom Rice (GF, Dairy Free, Oil-Free)

Ingredients
  • 4.5 cups of rice
  • 15 dried Shiitake mushrooms
  • 4.5 tbsp dried shrimp**
  • 12 small pieces of scallops**
  • 1 lb chicken breast, cut into bite-sized chunks
  • 2 tbsp pureed ginger (or 6 slices of fresh ginger)
  • 4-5 cloves of garlic
  • Meat Marinade:
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 2 tbsp honey (or sugar alternative)
  • Seasoning for Rice:
  • 2 tbsp fish sauce
  • 2 tbsp GF soy sauce
  • 1 tbsp oyster sauce
  • dash of white pepper
  • Garnish: freshly chopped scallions
Instructions
  1. A few hours earlier, place the dried shrimp, scallops, dried mushrooms into 3 separate microwave-safe bowls and pour hot water over.
  2. Microwave your soaking dried scallops for one minute to speed up the process. Set aside for 30 -1 hour minutes.
  3. Now prepare your rehydrated mushrooms. Drain and set aside the reserved liquid. Chop off the stems and discard. Chop the mushrooms caps into small, fine pieces.
  4. Chop your chicken into similar size pieces. Marinate your chicken and mushroom cubes in soy sauce, oyster sauce and honey. Set it aside for at least 30 minutes.
  5. Drain your scallops and your shrimp, but reserve the liquid for later. Shred your scallops and chop your shrimp till small pieces or fine shreds.
  6. Heat up a non-stick pan, sauté garlic and ginger until fragrant. Add in the drained scallops and shrimp and stirfry till fragrant.
  7. Add the chicken and mushrooms mixture to cook until it starts to turn white.
  8. Add in the rice and mix. Cook until fragrant.
  9. Add the whole rice and chicken mixture into a rice cooker or pressure cooker or instant pot.
  10. Mix together soaking liquid from dried shrimp, dried mushroom and dried scallops. Add in water to make up for the remaining amount of water required to cook the rice (usually about 1:1 but you can follow markings in the rice cooker). Add in the seasonings for the rice into the rice.
  11. Start cooking your rice - follow instructions for your specific equipment.
  12. When the rice is done, taste and adjust seasoning.
  13. Serve with freshly chopped scallions.
