[Sugar Free] 100 Calorie Starbucks Copycat Lemon Loaf (Paleo, Oil-Free)

- Ingredients
- ¾ cup coconut flour
- 4 eggs
- 1 tsp vanilla
- 4 tbsp lemon juice (about 2 lemons)
- 1¾ tbsp lemon zest, finely grated (about 3-4 lemons)
- ¼ cup unsweetened coconut yoghurt (or regular yoghurt)
- ⅔ cup applesauce
- **5 Packets of splenda +20 drops of Vanilla Creme Stevia (or ⅓ cup of any keto-friendly sugar)
- 1 tsp baking soda
- Glaze:
- ¼ cup yoghurt
- Sweetenr (Optional)
- Garnish: Extra Lemon Zest
- How to Make:
- Preheat oven to 350F.
- Sift the coconut flour into a large bowl.
- Pour all the remaining ingredients into a large bowl (except for baking soda) and mix well. (you need to add it in last for it not to react!)
- Line a loaf tin with parchment paper.
- When the oven is ready, mix the baking soda through and pour the batter in.
- Bake for 45 – 50 minutes. Stick in a chopstick/knife to check that it is cooked through.
- Cool completely and fridge overnight for best texture.
- Optional: Mix together the yoghurt glaze and drizzle on top. Sprinkle some of the reserved lemon peel.
**Stevia can sometimes produce a bitter aftertaste so I like to use a combination of it with another low carb sugar.
