[Sugar Free] 100 Calorie Starbucks Copycat Lemon Loaf (Paleo, Oil-Free)

  • ¾ cup coconut flour
  • 4 eggs
  • 1 tsp vanilla
  • 4 tbsp lemon juice (about 2 lemons)
  • 1¾ tbsp lemon zest, finely grated (about 3-4 lemons)
  • ¼ cup unsweetened coconut yoghurt (or regular yoghurt)
  • ⅔ cup applesauce
  • **5 Packets of splenda +20 drops of Vanilla Creme Stevia (or ⅓ cup of any keto-friendly sugar)
  • 1 tsp baking soda
  • Glaze:
  • ¼ cup yoghurt
  • Sweetenr (Optional)
  • Garnish: Extra Lemon Zest
Instructions
  1. How to Make:
  2. Preheat oven to 350F.
  3. Sift the coconut flour into a large bowl.
  4. Pour all the remaining ingredients into a large bowl (except for baking soda) and mix well. (you need to add it in last for it not to react!)
  5. Line a loaf tin with parchment paper.
  6. When the oven is ready, mix the baking soda through and pour the batter in.
  7. Bake for 45 – 50 minutes. Stick in a chopstick/knife to check that it is cooked through.
  8. Cool completely and fridge overnight for best texture.
  9. Optional: Mix together the yoghurt glaze and drizzle on top. Sprinkle some of the reserved lemon peel.
Notes
**Stevia can sometimes produce a bitter aftertaste so I like to use a combination of it with another low carb sugar.
