The BEST Braised Beef Stew (GF, Oil-Free)

Ingredients
  • 2.5 lbs Brisket / Chuck Roast, cut into ½" cubes (**Brisket will yield more tender meat)
  • 3 medium carrots, peeled and cut into chunks
  • 2 small turnips, peeled and cut into chunks (or 1 large potato)
  • 4 slices ginger
  • Sauce:
  • 2 apples
  • ½ onion
  • ½ cup GF soy sauce (kikkoman)
  • 2 tbsp honey
  • 2 tbsp minced garlic
Instructions
  1. Place everything for the sauce in a blender and blitz till smooth.
  2. In a large wok/pot, quickly brown all the sides of your chuck roast (Do this in batches).
  3. Add in the sauce and ginger slices.
  4. Bring to boil. Cover and turn to low simmer for 1 hour or until tender (1.5 hours).
  5. Add diced potatoes and carrots. Continue to simmer, covered, on low for 20-30 minutes.
  6. Garnish with sesame seeds and spring onions. Serve warm with Rice.
