Healthy Breakfast Egg Muffins (50 Calories)

Ingredients
  • 5 eggs
  • 1 cup egg whites
  • 6 tbsp non-dairy milk
  • ½ red bell pepper, finely chopped
  • ⅓ cup grated carrot
  • ½ cup cilantro, finely chopped
  • ½ tsp salt (more to taste)
  • ¼ tsp garlic powder
  • Black Pepper
Instructions
  1. Preheat oven to 350F.
  2. Add the eggs, milk and seasonings in a bowl and whisk. Mix in the vegetables.
  3. Prepare 12 Silicon Baking Cups, Divide the batter (i like to use a ladle).
  4. Bake for 20 minutes. Cool for 5 minutes and serve immediately OR store in fridge in an airtight container.
Notes
*We got our baking cups on amazon. THIS IS THE BEST WAY of making egg muffins. It is VERY difficult to take out egg muffins if you just grease a muffin pan or use regular paper liners.
