Flourless Cashew Chocolate Chip Cookies (Paleo, GF, Dairy Free)

Ingredients
  • 1¼ cup raw cashews
  • 1 egg (or Flax Egg)
  • ½ cup coconut sugar
  • ½ tbsp vanilla extract
  • 2 tsp baking powder
  • 100g Bar Vegan/Dairy Free Dark Chocolate, roughly chopped)
Instructions
  1. Soak cashews in hot water for 30 mins - 1 hour.
  2. Preheat oven to 350F.
  3. Drain the cashews well and add to a food processor. You want it to be completely smooth and creamy. This will take 5-10 minutes.
  4. Add in the egg, sugar, vanilla, baking powder. Process till combined.
  5. Mix in the chocolate chips.
  6. Portion out 1 tbsp of dough on a baking tray.
  7. Bake for 10-12 minutes. (Best eaten when it is completely cooled and firm).
