How to Make Sugar & Oil free Granola (GF, Vegan)

- 1¾ cup GF Rolled Oats
- ⅓ cup Wonderful pistachios, shelled & salted
- ¼ cup desiccated coconut
- ½ tsp cinnamon
- ½ tsp vanilla
- 6 tbsp applesauce
- ¼ cup dried cranberries
- Preheat oven to 300F.
- Mix together the oats, pistachios, cinnamon, vanilla, coconut and apple sauce in a bowl. Line a tray with parchment paper. Spread out your granola.
Bake for 45-50 minutes. Make sure to mix every 10-15 minutes. Turn off the oven. Open the oven door 1" wide to allow the granola to cool completely (at least an hour or overnight). After it has cooled completely, stir in the cranberries. We also chopped some of the browned pistachios for color! Serve with yogurt, berries and a drizzle of sweetener (if you like).
