How to Make Sugar & Oil free Granola (GF, Vegan)

Ingredients
  • 1¾ cup GF Rolled Oats
  • ⅓ cup Wonderful pistachios, shelled & salted
  • ¼ cup desiccated coconut
  • ½ tsp cinnamon
  • ½ tsp vanilla
  • 6 tbsp applesauce
  • ¼ cup dried cranberries
Instructions
  1. Preheat oven to 300F.
  2. Mix together the oats, pistachios, cinnamon, vanilla, coconut and apple sauce in a bowl. Line a tray with parchment paper. Spread out your granola.
  • Bake for 45-50 minutes. Make sure to mix every 10-15 minutes.
  • Turn off the oven. Open the oven door 1" wide to allow the granola to cool completely (at least an hour or overnight).
  • After it has cooled completely, stir in the cranberries. We also chopped some of the browned pistachios for color!
  • Serve with yogurt, berries and a drizzle of sweetener (if you like).
