Flourless Peanut Butter Chocolate Muffins (with White Beans)

Ingredients
  • 1 cup GF Oats
  • 1-14oz Northern White Beans
  • ½ cup unsweetened applesauce
  • 3 tbsp Peanut Butter (Natural)
  • 2 tsp vanilla
  • 1 tbsp apple cider vinegar
  • 1 tsp baking soda
  • ¼ tsp cinnamon
  • ⅓ + 2 tbsp Chocolate Chips (GF & Vegan)
Instructions
  1. Preheat oven to 350F.
  2. Drain the beans, rinse with cold water and dry thoroughly.
  3. Add all the ingredients (except the chocolate) into a blender and blend well.
  4. Fold in the Chocolate chips.
  5. Grease a mini muffin pan well. Divide 1-1.5 tbsp of batter into each. You should make 30.
  6. Bake for 10 minutes.
