Flourless Peanut Butter Chocolate Muffins (with White Beans)

- 1 cup GF Oats
- 1-14oz Northern White Beans
- ½ cup unsweetened applesauce
- 3 tbsp Peanut Butter (Natural)
- 2 tsp vanilla
- 1 tbsp apple cider vinegar
- 1 tsp baking soda
- ¼ tsp cinnamon
- ⅓ + 2 tbsp Chocolate Chips (GF & Vegan)
- Preheat oven to 350F.
- Drain the beans, rinse with cold water and dry thoroughly.
- Add all the ingredients (except the chocolate) into a blender and blend well.
- Fold in the Chocolate chips.
- Grease a mini muffin pan well. Divide 1-1.5 tbsp of batter into each. You should make 30.
- Bake for 10 minutes.
