Dishoom's Bombay Omelette

- 2 eggs
- 1 garlic clove
- ¼ tsp garam masala (or ground coriander)
- ¼ tsp turmeric
- ¼ tsp ground cumin
- 1 green chili (we only put half)
- 4-5 cherry tomatoes, quartered
- 2 tbsp white onion, diced (or red onion/spring onions)
- few sprigs of coriander, chopped
- salt (to taste)
- In a non-stick pan, stirfry your onion, garlic, chili, chopped coriander.
- Add in the spices and salt (generously).
- Add cherry tomatoes and heat till warmed through.
- Spread out the mixture and pour over the beaten eggs. Turn down the heat to low, cover with a lid.
- Once it has set, fold over the omelette and serve with toast, salsa and greens.
