Dishoom's Bombay Omelette

Ingredients
  • 2 eggs
  • 1 garlic clove
  • ¼ tsp garam masala (or ground coriander)
  • ¼ tsp turmeric
  • ¼ tsp ground cumin
  • 1 green chili (we only put half)
  • 4-5 cherry tomatoes, quartered
  • 2 tbsp white onion, diced (or red onion/spring onions)
  • few sprigs of coriander, chopped
  • salt (to taste)
Instructions
  1. In a non-stick pan, stirfry your onion, garlic, chili, chopped coriander.
  2. Add in the spices and salt (generously).
  3. Add cherry tomatoes and heat till warmed through.
  4. Spread out the mixture and pour over the beaten eggs. Turn down the heat to low, cover with a lid.
  5. Once it has set, fold over the omelette and serve with toast, salsa and greens.
