Black Sesame Walnut Banana Bread

Serves: 11 slices or 32 mini muffins
 
Ingredients
  • 2 cups oats (RECOMMENDED 1 cup of ground oats + 1 cup almond flour)
  • 2 tsp GF baking powder
  • 1 tsp baking soda
  • 3 ripe bananas (340g)
  • ⅓ cup honey
  • 2 eggs
  • 1 tsp vanilla
  • 2 tbsp black sesame seeds
  • 3 tbsp chopped walnuts
  • Topping (Optional):
  • ½ Banana, sliced lengthwise
  • Lots of Black Sesame
Instructions
  1. Add 2 cups of oats into a blender and blitz until fine grains/powder. Remove and set aside. (or alternatively 1 cup of oats + 1 cup of almond flour).
  2. Preheat oven to 350F.
  3. Mix together the wet ingredients. In a separate bowl, stir together the dry ingredients (except for black sesame seeds).
  4. Combine both mixtures. Stir in chopped walnuts and sesame seeds.
  5. Line a loaf pan with parchment paper and pour the batter in.
  6. Baked or 45-50 minutes until cooked. Allow it to cool completely before slicing.
  7. Optional Decoration: Slice a banana lengthwise and lay one half on top of the batter (cut side up). Sprinkle black sesame seeds on either side
