Black Sesame Walnut Banana Bread

Serves: 11 slices or 32 mini muffins
- 2 cups oats (RECOMMENDED 1 cup of ground oats + 1 cup almond flour)
- 2 tsp GF baking powder
- 1 tsp baking soda
- 3 ripe bananas (340g)
- ⅓ cup honey
- 2 eggs
- 1 tsp vanilla
- 2 tbsp black sesame seeds
- 3 tbsp chopped walnuts
- Topping (Optional):
- ½ Banana, sliced lengthwise
- Lots of Black Sesame
- Add 2 cups of oats into a blender and blitz until fine grains/powder. Remove and set aside. (or alternatively 1 cup of oats + 1 cup of almond flour).
- Preheat oven to 350F.
- Mix together the wet ingredients. In a separate bowl, stir together the dry ingredients (except for black sesame seeds).
- Combine both mixtures. Stir in chopped walnuts and sesame seeds.
- Line a loaf pan with parchment paper and pour the batter in.
- Baked or 45-50 minutes until cooked. Allow it to cool completely before slicing.
- Optional Decoration: Slice a banana lengthwise and lay one half on top of the batter (cut side up). Sprinkle black sesame seeds on either side
