Spicy Malaysian (Honey) Chicken 馬來西亞香辣雞腿 (Oil-Free, Paleo, GF)

Ingredients
  • 2 chicken thighs, bone-in
  • Marinade:
  • ½ tsp turmeric powder
  • 1 tsp curry powder
  • A little less than ½ tsp salt (double the recipe is ¾ tsp of salt, so use half of that by eye)
  • Water
  • Sauce:
  • 1½ cloves garlic
  • Pureed ginger (or use 1½ inch fresh ginger)
  • ¼ tsp curry powder
  • ½ tsp chilli paste (we used gochujang or use any homemade chili paste)
  • 1½ T tomato paste
  • ½ - ¾ T honey
  • ½ lime, juiced
Instructions
  1. Preheat oven.
  2. Combine marinade of chicken together. Add in a little water to mix into a thick slurry.
  3. Coat the chicken pieces evenly.
  4. Place on a baking tray and bake until brown and just cooked through.
  5. Heat a pan, add in the chilli paste. Saute quickly to avoid burning.
  6. Add tomato paste, chill paste, curry powder, honey. Stir to combine.
  7. Add water to loosen up the mixture.
  8. Add salt.
  9. Add the baked chicken in. (We had to add more water since the sauce was drying up very quickly)
  10. Spoon the sauce over so that it coats the chicken thoroughly.
  11. Simmer for a few minutes until cooked through. (Make sure you don't overcook the chicken)
  12. Add lime juice.
Notes
Serve this with gluten free tortillas/paleo flatbread/cauliflower rice/quinoa/brown rice - whatever you like!! We have been experimenting with paleo flatbreads and still haven't successfully found a perfect one yet!
