Montreal Pork Tenderloin

Ingredients
  • 20 oz (567g) Pork Tenderloin, no visible fat
  • Spice Rub
  • ¾ tsp black pepper
  • ¾ tsp smoked paprika
  • ½ tsp ground coriander
  • ½ tsp garlic powder
  • ½ tsp italian seasoning
  • ¾ tsp salt
  • Serve: Cauliflower Mash
Instructions
  1. Preheat oven to 350F. On the bottom rack of the oven, place a tray of water (this will keep the pork moist).
  2. Mix all the spices together.
  3. Cut deep slits into the pork (back and front), then rub seasoning all over until evenly coated.
  4. Place the pork on the top rack. Bake for 20 mins (or more depending on thickness. I personally likely it slightly pink so its still tender!)
