Cinnamon Roll Muffins (Low-Carb)

- ½ cup coconut flour
- 4 eggs
- 4 tbsp non-dairy yogurt **(see note)
- ½ tsp baking soda
- 4 tbsp maple syrup
- Pinch of Salt
- Topping:
- 2 tbsp maple syrup
- 11/2 tbsp cinnamon
- Preheat oven to 350F.
- Prepare a baking tray with 8 muffin liners.
- Prepare the topping: Mix cinnamon and 2 tbsp of maple syrup in a small bowl. Set aside.
- In another bowl, add coconut flour, baking soda and salt. Mix well.
- Crack in 4 eggs, yogurt and the remaining maple syrup in. Blend well.
- Place 2 tbsp of batter in each liner. Drizzle half of the topping.
- Divide the remaining batter over each one. (I like to use my fingers to spread the batter evenly over the muffin).
- Drizzle the remaining toppings over. Use a toothpick and swirl each batter.
- Bake for 18-20 mins or until toothpick inserted will come out clean.
One reader had success using 2 tbsp of milk instead of yogurt.
