Cinnamon Roll Muffins (Low-Carb)

Ingredients
  • ½ cup coconut flour
  • 4 eggs
  • 4 tbsp non-dairy yogurt **(see note)
  • ½ tsp baking soda
  • 4 tbsp maple syrup
  • Pinch of Salt
  • Topping:
  • 2 tbsp maple syrup
  • 11/2 tbsp cinnamon
Instructions
  1. Preheat oven to 350F.
  2. Prepare a baking tray with 8 muffin liners.
  3. Prepare the topping: Mix cinnamon and 2 tbsp of maple syrup in a small bowl. Set aside.
  4. In another bowl, add coconut flour, baking soda and salt. Mix well.
  5. Crack in 4 eggs, yogurt and the remaining maple syrup in. Blend well.
  6. Place 2 tbsp of batter in each liner. Drizzle half of the topping.
  7. Divide the remaining batter over each one. (I like to use my fingers to spread the batter evenly over the muffin).
  8. Drizzle the remaining toppings over. Use a toothpick and swirl each batter.
  9. Bake for 18-20 mins or until toothpick inserted will come out clean.
Notes
One reader had success using 2 tbsp of milk instead of yogurt.
