Peanut Butter Banana Baked Oatmeal

Serves: 12
- 2 cups quick oats
- 2 tsp cinnamon
- 1 tsp baking powder
- 4 tbsp granulated sweetener (or stevia)
- 2 large bananas, ripe (272g)
- 1 cup almond milk or water
- 4 tbsp peanut butter
- 1 tsp vanilla
- 1 tbsp flax meal, optional
- Preheat oven to 350F.
- Peel and weight your bananas to 272g. Reserve 12 slices for decor and mash the rest till relatively smooth. (you can also skip his step if you want)
- Add all the remaining ingredients into the bowl.
- Mix until everything is well combined.
- Line an 8x8 inch* tray with parchment paper. Pour in oatmeal batter.
- Layer the banana slices on top.
- Bake for 30 mins or until done.
*You can also double the recipe and use a 9 X13" pan and baked for the same time!
