Peanut Butter Banana Baked Oatmeal

Ingredients
  • 2 cups quick oats
  • 2 tsp cinnamon
  • 1 tsp baking powder
  • 4 tbsp granulated sweetener (or stevia)
  • 2 large bananas, ripe (272g)
  • 1 cup almond milk or water
  • 4 tbsp peanut butter
  • 1 tsp vanilla
  • 1 tbsp flax meal, optional
Instructions
  1. Preheat oven to 350F.
  2. Peel and weight your bananas to 272g. Reserve 12 slices for decor and mash the rest till relatively smooth. (you can also skip his step if you want)
  3. Add all the remaining ingredients into the bowl.
  4. Mix until everything is well combined.
  5. Line an 8x8 inch* tray with parchment paper. Pour in oatmeal batter.
  6. Layer the banana slices on top.
  7. Bake for 30 mins or until done.
Notes
*You can also double the recipe and use a 9 X13" pan and baked for the same time!
