Stovetop Granola

Ingredients
  • 1 cup rolled oats (gluten-free, if needed)
  • ½ cup nuts/ seeds (we used ¼ cup walnuts + ¼ cup pumpkin seeds)
  • ½ tsp cinnamon
  • ¼ tsp ground ginger (optional)
  • Pinch of salt
  • 1 - 11/2 tbsp goji berries (or any dried fruit you want, add to taste)
  • 2 tbsp honey
Instructions
  1. First prep your larger nuts by roughly chopping them into smaller chunks (you can skip this step if using seeds).
  2. Heat a nonstick an over medium heat. Add in your rolled oats and tossing frequently (do not step away) for a few minutes until slightly toasted and fragrant.
  3. Add in your chopped nuts/seeds, spices and seeds. Stir until everything is mixed through and nuts are toasted.
  4. Add honey. Stir until well incorporated.
  5. Remove from heat, add in your dried fruit.
  6. You can serve it right away, or let it cool and store in airtight container.
