Berry Yogurt Granola Bars

Ingredients
  • Granola crust:
  • 1 cup quick oats
  • 2½ tbsp applesauce
  • 3 tbsp runny peanut butter (or nut butter of choice)
  • ½ tsp vanilla extract
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • dash of salt (if peanut butter is unsalted)
  • Filling:
  • 1 cup yogurt (plain, unsweetened - dairy free or greek)
  • 1 tsp vanilla
  • 1½ -2 tbsp sugar (depending on preference)
  • Berry compote:
  • 4-5oz frozen berries of choice (you can use fresh)
  • Few tbsp of water or more
  • Other optional toppings: melted chocolate
Instructions
  1. Mix all the crust ingredients together. It might be easier to knead with your hands. Add water if needed!
  2. Line a 9"x5" loaf pan with parchment paper. Pour in the granola crust mixture and press it down to fill the shape of the tin.
  3. Place in freezer while you prepare the rest of the layers.
  4. Make the berry compote: In a small pot combine the berries and a few splashes of water over low-medium heat.
  5. Keep stirring and applying pressure to mash the berries while it cooks. Let the mixture boil for a few minutes until it thickens. Remove from the heat and let it cool for a few minutes whilst preparing the yogurt.
  6. Yogurt filling: Mix together the yogurt, sugar and vanilla. Taste and adjust to sweetness (yogurt brands may differ in tanginess).
  7. Pour the yogurt filling on top of the crust. Add dollops of stewed berries and use a knife to swirl.
  8. Return to the freezer for a few hours or until set.
  9. Before serving, transfer the pan to the fridge to let it defrost. Cut into bars and enjoy.
  10. We recommend other than serving, to store the bars in the the freezer otherwise the yogurt will melt.
