Pumpkin Pie Chia Parfait (Vegan, Gluten Free)

Ingredients
  • Pudding:
  • ¼ cup pumpkin puree
  • ¼ cup chia seeds
  • 1 cup milk of choice (dairy free if needed)
  • ¼ tsp vanilla extract
  • 2-3 tbsp maple syrup
  • ½ tsp cinnamon
  • ¼ tsp ginger
  • pinch of clove
  • pinch of nutmeg
  • Toppings:
  • ⅓ cup yogurt (dairy free if needed)
  • ¼ cup granola
  • cinnamon stick, optional for garnish
Instructions
  1. Instructions: Mix all the ingredients together Taste and add more sweetness as desired.
  2. Stir. Let it sit for 5 mins to thicken and mix again before putting in fridge for a few hours or overnight.
  3. Assembly: Add in half of your chia pudding.
  4. Top with a few spoons of yogurt
  5. Sprinkle granola on top.
  6. End with mini cinnamon stick (optional)
