One pan Pumpkin Spice Granola (GF, Vegan)

Ingredients
  • 1 cup rolled oats
  • ½ cup nuts, chopped (we have used walnuts, pecans and pistachios)
  • ½ tsp cinnamon
  • ¼ tsp ground ginger (MUST)
  • ⅛ tsp nutmeg
  • ⅛ tsp clove
  • ¼ cup dried cranberries
  • 2 tbsp maple syrup
Instructions
  1. Toast rolled oats in a pan until slightly fragrant and brown. Make sure you watch the pan to not burn it.
  2. Add nuts, spices, toast for another few minutes
  3. Add maple syrup and cranberries, toss till combined.
  4. Remove from heat and let it sit for 10 minutes to harden slightly before breaking into smaller pieces.
