Turkey Greek Meatballs with Creamy Vegan Tzatziki (GF, Paleo, Low Carb)

Ingredients
  • 1 lb ground turkey (93% lean)
  • 1 tsp of each - cumin, smoked paprika, dried oregano, black pepper, garlic powder
  • 1 tsp salt
  • ⅓ cup finely chopped onion
  • 2 tbsp almond flour
  • Tzatziki:
  • ¾ cup plain unsweetened yogurt
  • 2 garlic cloves, chopped
  • ½ Persian cucumber, grated and squeeze all water out
  • Juice of ½ lemon
  • 2-3 tbsp fresh dill, chopped
  • ½ tsp salt
Instructions
  1. Mix well and set aside until ready.
  2. Portion out 1-1.5 tbsp sized balls. Just dollop them onto a parchment lined pan. Then wash your hands, use wet hands to shape the top fo the balls to round it out. It's easier to do this with clean hands AFTER portioning. Spray with avocado oil.
  3. Bake at 350 on parchment lined sheets for 10-12 mins.
  4. Tzatziki: Chop cucumbers finely. Mix together all the ingredients. Taste and adjust seasoning.
  5. Serve with romaine lettuce, cucumbers, tomatoes, pickled red onions, tzatziki sauce and normal pickles (hummus can be added too)
