Gluten FREE, Low Carb Simple Korean Spicy Noodles (Bibim Guksu)

Ingredients
  • 2 bags of noodles - we used shiritaki noodles
  • Sauce:
  • 3 tbsp OUR gochujang (or you can use store bought)
  • 1 tbsp low sodium soy sauce
  • 2 tbsp apple cider vinegar
  • 2 tbsp sugar
  • 2 cloves, garlic minced
  • ½ cup chopped kimchi
  • To serve:
  • Cucumber
  • Hard boiled egg
  • Sesame oil
  • Sesame seeds
Instructions
  1. Mix together the ingredients of the sauce. Taste and adjust seasoning to taste
  2. Prepare your noodles. For the shiritaki noodles, we just drained and rinsed it. Microwave it in a bowl to heat up! You should follow the instructions provided for your specific brand/type of noodles for preparation.
  3. Garnihs with sesame seeds, sliced cucumber and a hard boiled egg. You can drizzle some sesame oil for extra fragrance and taste!
