Mia's Chicken Salad (Fast, cheat's)

Ingredients
  • 2 large cans of chicken (12.5 oz each), drained well
  • 3 stalks celery, finely chopped
  • ¼ red onion, finely chopped
  • 6 tbsp of plain non-dairy yogurt (you can use your favorite brand!)
  • 2 tbsp of lemon juice (and more to taste)
  • Fresh dill/parsley/basil or ½ tsp of dried dill
  • pinch of salt
  • Black Pepper
  • Other optional mix ins: grapes, apples, nuts (pecans/walnuts)
Instructions
  1. Drain the chicken.
  2. Prepare the vegetables and herbs (wash and chop)
  3. Mix in all the ingredients. Taste and adjust the seasoning.
  4. You can serve with salad or on toast or in wraps. Refrigerate leftovers for meal prep for up to 2-3 days.
