Vegan Caramel

Ingredients
  • 1 cup lite coconut milk
  • ¼ cup coconut sugar (or sugar substitute of choice)
  • 4 (80g) pitted medjool dates (if its not soft, soak in hot water to soften)
  • 1 tbsp cornstarch
  • Pinch of salt
Instructions
  1. In a pan combine coconut milk, sugar and pinch of salt together. Heat until coconut sugar has melted.
  2. Transfer to blender and add the soft date to make a thick caramel. Blend until smooth.
  3. Pour back into the pan.
  4. In a separate bowl, whisk cornstarch and a little water together. Pour it into the pan and let it cook over low heat till thickened
