Mix together the coconut milk, non dairy milk (if using), honey and chia seeds. Let it sit for 2-3 minutes mins, and stir again until evenly distributed. Repeat again after 2-3 mins.
In a blender, add mangos, coconut milk and sweetener. Blend until smooth.
In your popsicle molds, add alternate layers of coconut and mango mixture. Freeze overnight and enjoy!
