Mango Chia Popsicles

Ingredients
  • Coconut Base:
  • ½ cup coconut milk lite (or full fat)
  • ¼ cup non-dairy milk (or more coconut milk)
  • 1.5 - 2 tbsp honey or sweetener or choice
  • 2 tbsp chia seeds
  • Mango Puree:
  • 2 cups frozen mangoes
  • 4 tsp honey or sweetener or choice
  • 4 tbsp coconut milk lite (or full fat)
Instructions
  1. Mix together the coconut milk, non dairy milk (if using), honey and chia seeds. Let it sit for 2-3 minutes mins, and stir again until evenly distributed. Repeat again after 2-3 mins.
  2. In a blender, add mangos, coconut milk and sweetener. Blend until smooth.
  3. In your popsicle molds, add alternate layers of coconut and mango mixture. Freeze overnight and enjoy!
