Blend the remaining ingredients in a food processor until smooth.
Pour the melted chocolate in and blend until smooth.
Taste and adjust seasonings/
Do not skip: Fridge mousse for at least 30 mins (the longer the better). This will allow the mousse to thicken and the chocolate flavor to deepen as it sits longer in the fridge.
This tastes best with toppings and other textures! Serve with some cocoa nibs/ crushed granola for texture as well as sea salt for an elegant finish!
