IMPROVED Gluten Free, Dairy Free Apple Crumble

Ingredients
  • Spiced apple filling
  • 4 large good-quality Red apples,(or you can use a Granny Smith )
  • 1 tablespoon lemon juice
  • 2 tablespoons water
  • 1 teaspoon cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon nutmeg
  • ¼-1/2 tsp ground cardamom (1/2 tsp if you feel adventurous enough, it adds a unique note that complements the apples)
  • Pinch of sea salt
  • Topping
  • ½ cup almond flour
  • ⅓ cup oat flour (gluten-free, if needed0
  • ⅓ cup rolled oats (gluten-free, if needed)
  • ¼ chopped pecans (or nut of choice)
  • 1 tbsp coconut sugar (we like ours mildly sweet! Add more sugar if not serving with ice-cream and/or if you prefer sweet apple crumble)
  • 5 tbsp melted coconut oil
  • ½ teaspoon cinnamon
  • ¼ teaspoon sea salt
Instructions
  1. Preheat oven to 400F.
  2. Peel and cut the apples into 1-inch pieces
  3. In a pan, add in the apples and the filling seasoning. Cook for 15 mins until they are soft, keep stirring to avoid burning.
  4. In a separate bowl, mix all the topping ingredients together.
  5. Put apples in to a baking tray/ cast-iron skillet. Sprinkle the topping over the apples and bake for 18-20 mins.
  6. Remove and serve immediately with ice cream.
