Mix together your PB power and hot water until you reach a thick consistency. (adjust thickness to your own liking by adding water or more PB powder)
Line a baking tray with parchment paper. Lay half of your banana slices onto the tray.
Scoop about 1 tsp portion of the PB mixture onto each banana. And sandwich with another slice of banana.
Cover and freeze for an hour.
Melt your chocolate in a bowl. Work quickly and coat each banana sandwich in the dark chocolate mixture. (I find that using 2 forks is the most helpful. Also, only take out a couple of the sandwiches out of the freezer at a time. Once the sandwiches start thawing it is much harder to dip).
Place onto a parchment paper covered tray. Return to the freezer.
Before serving, allow the banana slices to thaw for 5-10 minutes to enjoy!
Notes
Paleo, Nut Free: If you are allergic to nuts, feel free to use caramel, nutella, butterscotch, jam, more chocolate...this recipe is very, very adaptable and versatile!
PB Powder Substitute: this is a healthier alternative to Peanut Butter. It gives the same flavor but with only half the calories. You can use ¼ cup of regular smooth Peanut Butter instead.
