Dakjjim- Braised Chicken with Vegetables 닭찜 (GF, Oil-Free)

Ingredients
  • 3 lbs chicken drumsticks (chicken wings, thighs), fat removed
  • 3.5 oz Sweet Potato noodles (dangmyeon)
  • 3 cloves garlic
  • 2 slices of ginger
  • ½ large onion, sliced
  • Vegetables:
  • 2 russet potatoes, peeled and diced in 0.5” cubes
  • 2 medium carrot, diced or 2 stalks celery
  • 100g white mushrooms, diced
  • 1 zucchini (or cucumber)
  • Garnish: Sesame Seeds, Sesame Oil, Green Onions
  • Sauce:
  • ¼ cup GF Kikkoman Soy Sauce
  • ¼ cup GF Oyster Sauce
  • ¼ cup honey
  • Black Pepper
Instructions
  1. Place chicken into a pot, cover with water and blanch for about 1 minute to remove excess fat.
  2. Drain the water and return the chicken to the pot. Add 2-3/4 cups of water, the sauce carrots and potatoes.
  3. Cover and bring to boil. Once boiling, turn down to medium heat. Let it simmer covered for 15 minutes, stirring occasionally.
  4. Soak the potato noodles in cold water, completely covered and set aside.
  5. After 15 mins on simmer, add in the remaining veggies and noodles. Turn heat on HIGH and cook uncovered for 15 mins until the noodles and vegetables are soft. (if it gets too thick, add some water).
  6. Taste and season with black pepper.
  7. Garnish with sesame seeds, sesame oil and green onions.
