Korean Warm Noodle Soup (GF, Oil-Free)

Ingredients
  • Rice Vermicelli Noodles (enough for 3 people)
  • 9 cups of chicken broth
  • 1 piece of dried sea kelp
  • salt/soy sauce
  • Garnishes:
  • 1 sheets of nori seaweed
  • 2 tbsp sesame seeds
  • 3 poached eggs
Instructions
  1. Pour the chicken broth into a pot and add the kelp. Bring to a boil and allow it to simmer for 10 minutes over low heat.
  2. Taste and season with salt.
  3. Cook Noodles according to directions given on the package.
  4. Place cooked noodles into a bowl. Pour over broth.
  5. Garnish with seaweed strips, poached egg, sesame seeds and the side dishes below.
