Stressed = Desserts
I think that is my motto in life. There is something about sugary, sweet treats that just makes you feel so much better. One of the hardest things to give up on this gluten-free, lactose-free, oil-free diet is refined sugar desserts. I love my cheesecakes, pastries, tarts…sometimes I find myself wishing I could just have a bite of it.
My family loves to eat. I’m sure you can tell by now. On special occasions (before I changed my diet), we like to go to enjoy a good buffet. Most people run to just grab food. My sister and I love to look around and to see all the incredible options. Not surprisingly our first stop is always the dessert bar. The towers of miniature french patisseries filled with raspberry and blackberry jam; lemon tarts with topped with a cloud of fluffy-marshmallowy meringue; creamy and rich chocolate marbled New York cheesecake; warm buttery croissant pudding with a smooth, cold vanilla sauce; freshly made waffles with maple syrup, caramelized almonds and peanut butter sauce (sounds strange, but trust me this combination is divine)…oh my gosh. That was heaven. I would look forward to this all the time! Thinking about it just makes my mouth water.
But those aren’t things you can eat everyday. Ever since going gluten and lactose free, it was hard finding desserts that I could eat. SO what kinds of desserts can you make that is satisfying but guilt-free? Are there really healthy, refined-sugar free desserts?
OH HECK YES.
This is delicious, easy, simple, budget friendly dessert for a crowd! Sounds too good to be true right?
Frozen bananas sandwiched in between a low-calorie PB powder peanut butter dipped in melted. luscious dark chocolate. Its like a healthy, guilt-free reese peanut butter cup but way better?! It was delicious! well…absolutely amazing. I don’t even have words to describe it! We added in peanut butter because it adds a nice richness and creaminess to the dessert. Serving it cold makes it taste more like ice cream!
I don’t even feel guilty after munching down 4 of these in a row.
- 4 large Bananas
- 2 -10 oz Dark Chocolate Chips (Dairy Free)
- 8 tbsp PB powder (+4 tbsp hot water)
- Thinly slice your bananas.
- Mix together your PB power and hot water until you reach a thick consistency. (adjust thickness to your own liking by adding water or more PB powder)
- Line a baking tray with parchment paper. Lay half of your banana slices onto the tray.
- Scoop about 1 tsp portion of the PB mixture onto each banana. And sandwich with another slice of banana.
- Cover and freeze for an hour.
- Melt your chocolate in a bowl. Work quickly and coat each banana sandwich in the dark chocolate mixture. (I find that using 2 forks is the most helpful. Also,only take out a couple of the sandwiches out of the freezer at a time. Once the sandwiches start thawing it is much harder to dip).
- Place onto a parchment paper covered tray. Return to the freezer.
- Before serving, allow the banana slices to thaw for 5-10 minutes to enjoy!
PB Powder Substitute: this is a healthier alternative to Peanut Butter. It gives the same flavor but with only half the calories. You can use ¼ cup of regular smooth Peanut Butter instead.
