A dollop of whipped cream, a sprinkle of cookies crumbles, another layer of cream, then cookies again. The fragrant smell of coconut and ginger penetrated through the entire kitchen…it was heavenly.
I sneaked a glance at Zoe before dipping my finger into the mixing bowl. She laughed and shook her head. Yum..Creamy, smooth and crumbly. If I could describe it, it was like a light cheesecake and my favorite snickerdoodle cookie crumble combined into a delicious dessert. Elegant. Beautiful and absolutely perfect. Isn’t taste testing the best part of cooking?
Beep. I looked down at my phone and noticed a text I had received from my mum. I was surprised it was already 11pm in Hong Kong. Why was my mum texting so late at night? I looked and saw a long text with a list of spelling and grammar corrections for my recent blog post. A feeling of warmth overcame me. Despite her busy schedule working full-time; doing her church calling; taking care of my younger sister; my amazing mother always found the time to read through my posts just so she could tell us how much she loved it. She was always the first one to read it.
My dad was exactly the same way too. He would take the time during his scarce lunch hours to call us regardless of how many meetings or business lunches he had. We never doubted how much our parents loved us, everything and anything they did was for us. They taught us what it meant to be loved and how to show love to others. Most importantly, they taught us what “true love” was by example.
If Romeo and Juliet was real; If Elizabeth and Mr. Darcy were actually living amongst us – it would be my parents. I remember Friday nights sitting on the couch watching a movie and seeing my darling mother run to pick up the ringing telephone because my dad was calling from another country. I remember long late nights my mum would stay up to wait for my dad to come home. Even now in college their expression of their love is constant and evident. Sometimes I couldn’t help but giggle reading my mum’s comment on a picture of my dad saying how “cute” he looked. My dad was just as bad. He would call my mum everyday just as she got to work to make sure she had arrived safely. They would call each other at least 3 times a day whilst they were at work. Whenever my dad needed to go somewhere even if it was just a 15 minute travel to drop off my Grandpa at the Ferry Pier, he always convinced my mum to accompany him just to spend time with her.
Zoe, Raena and I would just smile and laugh at how my parents treated each other. They were adorable. And we loved them for it. My parents exemplify to me what it means to show and express love. Although the definition of love is broad, love to me is alive in the people around me especially in my parents. And love is the only way to describe how I feel about this scrumptious Macau Delicacy – Serradura Pudding. A dessert we have dreamed to recreate and so this is our Gluten Free, Paleo and Dairy Free rendition of the beautiful infamous dessert in Macau – a dessert layered with cream and cookies crumbles.

- 1 batch of our Fall Graham Crackers (GF, Dairy Free, Grain Free, Refined Sugar Free) OR use storebrought
- 2 cups of Coconut Cool Whip
- 4 tbsp Coconut Condensed Milk (recipe below)
- 4 plastic cups
- Homemade Coconut Condensed Milk
- 1 can Full-Fat Coconut Milk
- ¼ cup Honey
- How to Make:
- Put your graham crackers in the blender and crush till you get large crumbs. You can also place them into a ziplock bag and crush using a rolling pin. Set aside.
- Gently, fold in your condensed milk with the coconut cool whip.
- Assembly: Grab a cup and put a large spoonful of graham cracker crumbs at the bottom. Make sure it is in a even layer.
- Take a spoonful of the cool whip mixture and carefully dollop it on top of the cracker crumbs. Use a back of teaspoon to gently even it out. You want to be very careful because you don't want to mix your crumbs and whipped top together.
- Repeat the process till you make about 4 layers of cream and 5 layers of crumbs.
- Cover with plastic wrap and fridge. These will keep up to 2-3 days. They taste best overnight or after sitting in the fridge for several hours.
- *You can make as many or as little layers are you like. Just make sure you start and end with cracker crumbs.
- Coconut Condensed Milk:
- Pour the coconut milk into a pan. Bring it to boil over medium heat.
- Once it starts to boil, turn the heat to low. Add in the honey.
- Simmer for 30-40 minutes till reduced to half the amount. Refrain from stirring during this time.
- Once its thickened and reduced, allow it cool completely before pouring into an airtight jar to keep in the fridge or you can it use immediately.
Coconut Cool Whip: If you can't find cool whip another great option would be to use coconut whipped cream (Just scoop out the solid layer of from a can of chilled, full-fat coconut milk and beat till slightly thickened). You will have to add a little more condensed milk since there is no added sugar.
Fun Options for Kids:
You can use whatever cookies you like: Oreos, snickerdoodles, chocolate chip, sugar cookies, shortbread or your favorite cookie recipe. The possibilities are endless.
Flavour the cream with different extracts.
Add in an extra layer of berries, mangos, peaches or fruit for a more fruity dessert.
Add in a layer of nuts, granola or even sponge cake for an english trifle!
Traditional Method: "Serradura" in Portuguese means "Sawdust". It was first introduced to Macau/Hong Kong during the Colonization of the Portuguese. Why Sawdust? Simply because of the beautiful layers of crushed Marie biscuits that resembled fine sand and light whipped cream combined with condensed milk. Serradura can be found in the form of a pudding or even in a cake -frozen to resemble the texture of ice-cream. This simple, yet light dessert is one of Macau's most famous treats.
Due to it popularity, serradura has expanded into many categories of flavors including oreo, green tea, durian, mango, coffee, rocky road! However, my personal favorite has always been the original. It is surprising how deliciously light and delicate this dessert is!
