After being in Ohio for a little longer than a week, I have been impressed by just how green everything is. We came here just at the perfect time of the year.
I was even more impressed by the abundance of summer fruits we saw as we walked around the grocery stores – cantaloupes, watermelon, strawberries, mangos, pineapples – all on sale. We also discovered that there were more kinds of apples than we had ever imagined. The fragrant, perfumed smell of the tropics penetrated the store, as busy mothers; families hurried to pick the best items before they were taken.
I smiled as I recalled the only other time I remembered seeing so much fresh fruit – our home in Hong Kong. Zoe gently reminded me of the dull green bowl in our living room that was robustly piled high with vibrant colors of apples, oranges, pears, papayas, kiwi, mangos, plums. Sometimes we had the occasional luxury of peaches, lychee, dragonfruit, starfruit and even durian.
We consumed so much fruit as a family that we often found ourselves at the grocery store more than once a week to replenish that empty bowl. But it also wasn’t rare to find that we had too much fruit and so we would have to store the extras under the table.
I remember a friend that was visiting walking into our living room and stared at our fruit bowl that was piled high with gorgeous fruit. She picked a red fuji apple from the top of the pile and turned to me,
“Wow. Thats a really nice fruit bowl. It’s all fake isn’t it?”
With surprise written all over my face, I replied, “No They’re all real. We eat all of that.”
Whenever Zoe and I pass the fruit aisle, we always are reminded of our “infamous” fruit bowl back home.
As summer is just around the corner, with July 4th, Fathers day, weddings, family reunions coming up – we decided that it would be the perfect time to use some of that juicy fruit. Whatever fruit you can get – we have created the perfect formula for a beautiful cocktail that EVERYONE WILL LOVE.
Not only are these FRUIT MOCKTAILS delicious, but they are refreshing and extremely healthy. With no added sweetener, the natural sugars and flavors of your favorite fruits will shine. This is a guilt-free sweet treat for the hot summer that will nourish your skin and leave you feeling amazing about yourself!
May 2017 Recipe Redux Challenge:
Our Summer “Mocktail” Formula:
1 Cup Liquid Base: Coconut water/ Non-Dairy Milk/ Juice
2 Cups Berries: Your Choice
1 Fruit of Choice: Grapefruit/Orange/Apple/Banana
1 Cup Tropical Fruit: Mango/Pineapple/Papaya
1 tbsp Citrus Juice: Lemon/Lime
1 Cup Diced Fruit: Your Choice
Grapefruit-Strawberry-Mango Mocktail (Picture above)
- 1 cup coconut water
- 2 cups strawberries, hulled
- 1 grapefruit
- 1 mango
- Juice of ½ lime + zest
- Diced strawberries, mango, grapefruit
- Add the first 5 ingredients into the blender and puree till smooth.
- Fold in extra diced strawberries, mango or grapefruit.
- Taste and add sweetener if needed.
