It’s that time of year when things start to pick up right before the holiday season. Exams, job hunting, projects and a whole bunch of other things are happening. I can’t help but feel the weight of responsibilities and deadlines weighing on me. Despite being in college for almost 5 years now, somehow I still haven’t learnt how to make things easier for myself – managing time and stress.
Whether its juggling school or work, social life or family time, there is just a never-ending list of things to do. I’ve found it harder to make time in the kitchen to make more elaborate meals. Most evenings I just throw together a quick salad with avocado, eggs and sweet potato. This allows me to spend more time enjoying a good conversation, watching some of my favorite youtube stars, or getting lost in my thoughts reflecting on the day. So where is the balance between resting the body/mind, and also keeping yourself nourished and healthy?
The answer for me is simply – easy 30 min fail-proof recipes that is satisfying. When I saw pork tenderloin on sale at Smiths I knew I had to buy it right away! I’ve made this once a while back and it was absolutely delicious. Best of all, this “Spiced” Tenderloin only takes 30 mins from start to finish. You just rub in the marinade and stick it in the oven to cook. You spend majority of the time just sitting there waiting. Its a perfect recipe for LAZY cooks like me.
Tenderloin is a very lean cut of meat and is a great alternative to chicken breast . The seasoning is extremely flavorful and absolutely addicting. I assure you that you will be making this often.
Inspired by our delicious 5 spice pork tenderloin that WE make ALL THE TIME, this new recipe is equally as delicious and made with store cupboard spices. I love that there is no artificial sweeteners, flavorful enhancers or oil – I usually make it at the beginning of the week so that I can just reheat it for dinner. I love this with cauliflower mash, salads, stir-fried veg or even as a snack. (Oh and also a great one to serve to guests. Who knew cooking pork could be that easy?)
(Update (Jan 2020): Meal Prep Shot before we left for Hong Kong. Literally this took no less than 30 minutes to make! My sister thinks this recipe is DANG GOOD!)
- 20 oz (567g) Pork Tenderloin, no visible fat
- Spice Rub
- ¾ tsp black pepper
- ¾ tsp smoked paprika
- ½ tsp ground coriander
- ½ tsp garlic powder
- ½ tsp italian seasoning
- ¾ tsp salt
- Serve: Cauliflower Mash
- Preheat oven to 350F. On the bottom rack of the oven, place a tray of water (this will keep the pork moist).
- Mix all the spices together.
- Cut deep slits into the pork (back and front), then rub seasoning all over until evenly coated.
- Place the pork on the top rack. Bake for 20 mins (or more depending on thickness. I personally likely it slightly pink so its still tender!)
