You can see how much we love oats by the sheer volume of recipes that use oats from savory to sweet to cakes! Oats are high in fibre, protein and are so good for you. I really enjoy incorporating it into my everyday meals.
Recently, I’ve been obsessed with one pan/pot meals. There never seems to be enough time in the world so I’m all for simple, tasty recipes in bulk! This recipe we are sharing today is honestly a cross-household favorite. Zoe first discovered this and introduced it to me. I was skeptical at how good it could be? I mean yes banana and peanut butter is good, oatmeal is good, but I wasn’t prepared to be surprised. Anyways, I was proven wrong. I was blown away at how delicious it was. It was such a treat to have a square of “oatmeal” when I’m really having dessert.
My fiance describes this as “not good looking, or ugly” but its “actually really good”. I’m almost embarrassed to admit that we have probably eaten this 2 months straight every week. I have now upgraded form an 8 x8″ pan to doubling this and making it in an 9×13″ casserole pan, because there’s gotta be enough to last us both!
I love the natural sweetness that comes from ripe bananas. I HIGHLY recommend using VERY RIPE bananas (sometimes to the point where its covered all in black dots) to get the maximize sweetness possible. I also recommend using quick not whole rolled oats for a finer texture. This is great cold from the fridge or even right after it is baked. To be extra fancy, we decorate this with banana slices but thats totally optional if you’re feeling lazy and just wanna mix, pour and bake!
- 2 cups quick oats
- 2 tsp cinnamon
- 1 tsp baking powder
- 4 tbsp granulated sweetener (or stevia)
- 2 large bananas, ripe (272g)
- 1 cup almond milk or water
- 4 tbsp peanut butter
- 1 tsp vanilla
- 1 tbsp flax meal, optional
- Preheat oven to 350F.
- Peel and weight your bananas to 272g. Reserve 12 slices for decor and mash the rest till relatively smooth. (you can also skip his step if you want)
- Add all the remaining ingredients into the bowl.
- Mix until everything is well combined.
- Line an 8x8 inch* tray with parchment paper. Pour in oatmeal batter.
- Layer the banana slices on top.
- Bake for 30 mins or until done.
