Climbing out of bed every day is probably the toughest thing I have to do every morning. So I’ve learnt a few tricks to let me “roll” around in bed for a few extra minutes. If I pick out an outfit the night before, have all my devices plugged in, my mug filled with water already then I can enjoy a few extra minutes of comfort.
Then after that I get to work. What really keeps me going is thinking about when’s my next meal time. As mundane as that sounds -it’s seriously the most exciting part of the day. I look forward to eating delicious, healthy meals packed full of protein, textures and flavors. It’s also the time of the day where my husband I can sit down and chat properly. Both my husband and I love walking past the fridge during our breaks and looking at our magnet whiteboard to check our calendar of our meals for the coming week!
Given the nature of our jobs, we’ve had to find creative ways to meals that are quick and delicious! I personally love oatmeal – because I have such a sweet tooth and I get to put a variety of toppings on top. Also, its great for my digestion and jammed back full of fibre to keep you full for long. After enjoying a couple weeks of the classic banana peanut butter oats, we have now upgraded to this delicious chocolate overnight oats. This was an absolute revelation because its requires ZERO cooking! All you need to do is mix everything together the night before and fridge it! This is honestly even easier than cooking stovetop oatmeal. The best part of all is that my husband requests to eat this once a week, because its literally dessert for a meal.
I don’t quite remember how I came up with the recipe, but I’m so glad I did because even though its mroe a treat it is actually very balanced meal packed with healthy omega 3 and vitamins from the flax and chia; healthy source of carbs and fibre from the oats, calcium from the almond milk and amazing nutrients from cacao nibs.
You can obviously serve this however you like but after eating this probably 30-40x not my favorite combination is bananas and some creamy raw cashew butter. Shoutout to my mom who sent me jar of raw cashew butter because honestly it is incredible! Our jar has survived barely 3 weeks in our home given how many times we’ve eaten this recently…
Just an extra note: cacao nibs are crucial in this recipe because they give a wonderful crunch and chocolatey flavor to the oats! But if you really don’t have access I would suggest adding in some mini dark chocolate chips!
- ½ cup oats
- 1 tbsp ground flax or chia seeds
- 2 tsp cacao nibs
- 1 tsp cocoa powder
- 1 tbsp + 1 tsp sugar (we used stevia)
- ¼ tsp cinnamon
- ½ cup non dairy milk (+ more to serve)
- Place all the dry ingredients into a glass jar or tupperware.
- Mix well and pour in milk.
- Refrigerate overnight.
- NEXT DAY: Serve with chopped bananas, cashew butter and other toppings of your choice!
- Pour over additional cold milk before serving and you’re ready! My favourite way to enjoy this is to mix it all up and then eat!
