As the last wave of summer heat passes through, I can’t help but stock up my fridge with the last of the seasonal fruits. We’ve been loving yellow and white peaches, nectarines and plums. While it is easy to purchase some frozen popsicles, or buy a tub of ice-cream there is just something unique about enjoying homemade fruit popsicles. Not only is it lower in sugar, but it is easy, fun activity to do with kids/ friends and probably much cheaper!! The colors are also absolutely stunning. I imagine you can change this up and do it with any fruit you have on hand. Now I have a delicious health snack in my freezer whenever I’m craving a pick-me-up in the afternoon!
Simple, delicious, easy and STUNNING treat to enjoy before the end of summer!
- Berry Layer:
- 1 cup frozen mixed berries (same with peaches)
- 2 tbsp lite coconut milk
- 2 tsp honey
- Peach Layer:
- 1 cup fresh peaches, peeled
- 1 tbsp lite coconut milk
- 2 tsp honey
- Yogurt Layer:
- ¼ cup lite coconut milk
- 6 tbsp dairy free yogurt
- 2-4 tsp honey (depending if your yogurt is unsweetened)
- Prepare a silicon popsicle mold.
- In a blender, add the ingredients for the peach layer and blend till smooth. Taste and adjust sweetness. Remove and set aside.
- Clean the blender and repeat the steps for the berry layer.
- In a bowl, mix together ingredients for the yogurt layer.
- Once all 3 layers are read, first divide up the peaches mixture across 5-6 popsicles molds (depends n your size), next layer on the yogurt mixture and lastly the berry mixture
- Place into the freezer and freeze overnight to harden up before enjoying!
