Everyone knows that the mediterranean diet is one of the healthiest in the world. This recipe takes inspiration from some of their simple, yet beautiful flavors incorporating both fresh and dried herbs. It actually shocked me how good this SIMPLE recipe tastes. Even without the use of breadcrumbs and “fatty” pork/beef, the meatball is still flavorful and juicy. If you know me, you know I hate dry meat! With the addition of tzatziki, the creamy fresh sauce makes this EXTRA delicious!
We love pairing this with a fresh salad of cucumber and tomatoes! Feel free to add in some roasted veggies, rice, pickled onions, olives, hummus — and you can level this up from a simple weeknight meal to a fancy date night meal! Its such a fun meal to serve to friends/family!
- 1 lb ground turkey (93% lean)
- 1 tsp of each - cumin, smoked paprika, dried oregano, black pepper, garlic powder
- 1 tsp salt
- ⅓ cup finely chopped onion
- 2 tbsp almond flour
- Tzatziki:
- ¾ cup plain unsweetened yogurt
- 2 garlic cloves, chopped
- ½ Persian cucumber, grated and squeeze all water out
- Juice of ½ lemon
- 2-3 tbsp fresh dill, chopped
- ½ tsp salt
- Mix well and set aside until ready.
- Portion out 1-1.5 tbsp sized balls. Just dollop them onto a parchment lined pan. Then wash your hands, use wet hands to shape the top fo the balls to round it out. It's easier to do this with clean hands AFTER portioning. Spray with avocado oil.
- Bake at 350 on parchment lined sheets for 10-12 mins.
- Tzatziki: Chop cucumbers finely. Mix together all the ingredients. Taste and adjust seasoning.
- Serve with romaine lettuce, cucumbers, tomatoes, pickled red onions, tzatziki sauce and normal pickles (hummus can be added too)
