I love a good chicken salad whether thats on top of salad, a wrap or on toast. I love that is creamy and full of textures! It’s actually REALLY easy to make at home, but it’s not always easy to find a mayo free, dairy free and nut free version. On days when I get lazy, I especially love this particular recipe where I can toss together a quick meal in just minutes between my meetings. This requires NO cooking at all and Costco canned chicken honestly taste fabulous!
Try this super easy recipe at home for a quick meal prep — I’m sure you’ll love it! In this recipe onions and celery add a wonderful texture without the addition of nuts. I also love adding whatever fresh herbs I have on hand to make this extra special! Its also protein packed and amazing for those looking for an easy healthy meal for weight loss.
- 2 large cans of chicken (12.5 oz each), drained well
- 3 stalks celery, finely chopped
- ¼ red onion, finely chopped
- 6 tbsp of plain non-dairy yogurt (you can use your favorite brand!)
- 2 tbsp of lemon juice (and more to taste)
- Fresh dill/parsley/basil or ½ tsp of dried dill
- pinch of salt
- Black Pepper
- Other optional mix ins: grapes, apples, nuts (pecans/walnuts)
- Drain the chicken.
- Prepare the vegetables and herbs (wash and chop)
- Mix in all the ingredients. Taste and adjust the seasoning.
- You can serve with salad or on toast or in wraps. Refrigerate leftovers for meal prep for up to 2-3 days.
