Craving something sweet, but want a nutritious treat? Well try this delicious chocolate protein mousse bowl that DOES NOT USE protein powder! It’s naturally filling and high in protein from the tofu which has a beautiful thick consistency when blended, without being too overpowering in flavor. It tastes best when paired with other complementary textures like cacao nibs, berries and granola!
Surprise surprise, this has now become a favorite amongst the girls in the family – particularly my mom who adores chocolate but is also watching her sugar intake! She was shocked to find out this was made from tofu when she first had it! This also an excellent treat while pregnant or while you’re breastfeeding since it is filling and satiating! I can’t wait to make a batch of this in my fridge before the baby comes!
The ingredients in this recipe are also really simple – tofu, chocolate, vanilla, salt, sugar, cocoa powder – and require no cooking on the stove/baking. Given we have tofu a lot in our day-day to meals in any asian family household, this something I can make all the time!
**If you aren’t looking to make this keto, you can definitely substitute the ingredients with regular chocolate and sweeteners!
- 8 oz silken tofu, drained
- 1 tbsp Hersheys special dark cocoa powder (or any good quality cocoa powder)
- 50g (4 tbsp) sugar free dark chocolate chips
- 1-2 tbsp sweetener of choice (maple syrup, or sugar free substitutes)
- ½ tsp vanilla
- ⅛ tsp salt
- Toppings: Cocoa nibs, berries, crushed granola, flaky sea salt
- Leave the silken tofu out in room temperature (this is important to ensure the mouusse doesn't turn grainy).
- Pour chocolaté chips into a microwave safe bowl. Microwave for 10-15 seconds, stir and repeat this chocolate until chocolate is melted. TIP:1 make sure you keep the bowl dry – If water gets into your chocolate while it's melting, it will become lumpy. TIP 2: You do not want to overheat the chocolate because it will become grainy.
- Set aside the melted chocolate to cool.
- Blend the remaining ingredients in a food processor until smooth.
- Pour the melted chocolate in and blend until smooth.
- Taste and adjust seasonings/
- Do not skip: Fridge mousse for at least 30 mins (the longer the better). This will allow the mousse to thicken and the chocolate flavor to deepen as it sits longer in the fridge.
- This tastes best with toppings and other textures! Serve with some cocoa nibs/ crushed granola for texture as well as sea salt for an elegant finish!
