“Why do you love cooking so much?”
“I love cooking because I get to cook for others.”
This is the question people often ask me. I mean cooking does seem to be a rather unique and strange hobby to have.
I feel like sharing a meal of excellent food always bring smiles to peoples’ faces. I love being able to watch people enjoy the food I make.
But thats not the only reason why I love cooking. Cooking makes me happy because I get to spend time with a very special person and that is my sister – Mia. Its always more fun when you get to do things with someone else. Being a twin is really such an incredible blessing! When we cook together – we laugh,we talk together, we get to eat. Often we end with piles of dishes, a messy counter, dirty aprons and stained mouths…we always get in trouble for conjuring up such a huge mess, but those have been the best moments of my life.
When we cook, both my sister and I suddenly transform into giddy, excited little 5 year old girls. In fact the minute we get into the kitchen all our worries and stress melts away.
This is why I am so grateful for her and for our love for cooking. We are closer because of this love we share. Every time we create something we like we just rave on about the whole day. Honestly the majority of our conversation is monopolized by food and cooking. Some people may think we are weird but thats how we bond. Truthfully, cooking with her and being able to do this blog with her has given me a greater purpose in life. It has helped me find stability, find balance, find joy.We are like partners in crime as we work together to create the healthiest recipes we can and create foods we love to eat.
I am grateful to have Mia in my life and to be able to cook with her everyday.
Today just happens to be one of those days where we both woke up feeling groggy and tired. I was not enthusiastic about having to go to chemistry class at 8am in the morning. But as we both dragged our sleepy bodies into the kitchen and pulled out our utensils and ingredients we needed to make dinner. Within 5 minutes, we became like highschool girls again giggling over boys, just because we were so excited. The kitchen became our little heaven again. As I put down my knife, I turned my head slightly to the right. I watched my sister smiling. I began to smile too. This felt like paradise. I am filled with gratitude for being able to do this everyday with her.
This is a spiced chicken which tasted like a fusion of Indian-Malaysian flavors. We both could not stop raving about for the whole day.We both loved it so much and it will be something we will make again and again.
We hope you enjoy it as much as we did.
Bon appetit!
- 2 chicken thighs, bone-in
- Marinade:
- ½ tsp turmeric powder
- 1 tsp curry powder
- A little less than ½ tsp salt (double the recipe is ¾ tsp of salt, so use half of that by eye)
- Water
- Sauce:
- 1½ cloves garlic
- Pureed ginger (or use 1½ inch fresh ginger)
- ¼ tsp curry powder
- ½ tsp chilli paste (we used gochujang or use any homemade chili paste)
- 1½ T tomato paste
- ½ - ¾ T honey
- ½ lime, juiced
- Preheat oven.
- Combine marinade of chicken together. Add in a little water to mix into a thick slurry.
- Coat the chicken pieces evenly.
- Place on a baking tray and bake until brown and just cooked through.
- Heat a pan, add in the chilli paste. Saute quickly to avoid burning.
- Add tomato paste, chill paste, curry powder, honey. Stir to combine.
- Add water to loosen up the mixture.
- Add salt.
- Add the baked chicken in. (We had to add more water since the sauce was drying up very quickly)
- Spoon the sauce over so that it coats the chicken thoroughly.
- Simmer for a few minutes until cooked through. (Make sure you don't overcook the chicken)
- Add lime juice.
