15 Minute Meal. One Pan.Start with Seafood Recipe Contest

The smell of shrimp drifted in the air. It reminded me of large fiery woks, fresh aromatics, the ocean and of course…home.
My memories of seafood all revolved around my incredible grandmother. She would always buy fresh crabs and shrimps from the fishermen in the local market. Whether it was steaming, stir frying – it was always delicious. Better than any restaurant out there.
The great thing about seafood is that it is a great carrier of flavor. You can make a variety of dishes with it. It can range from Chinese steamed fish with ginger and soy sauce to mediterranean seafood pasta; baked honey mustard salmon to sushi.
How about a squeeze of lemon juice, a sprig of dill, salt and pepper? Or if not stir frying with some garlic, ginger and scallions?
With the Seafood Party contest here, we thought it was a perfect idea to showcase a new seafood dish – one that is quite different but extremely delicious. Today Zoe & I decided to whip a really easy Chinese-inspired seafood appetizer that takes less than 15 minutes to cook. Seafood can be a little intimidating to cook if it’s your first time, but this recipe is just so easy to make and really hard to mess up.
We have made this dish probably more than 3 times and it never fails to impress us how something so simple can taste so good!
To spritz things up a little, we paired this shrimp and egg omelet with a homemade sweet and sour sauce that can be done in under 2 minutes. The sauce adds an extra element to this dish making it taste truly and utterly delicious (especially when the egg is still slightly runny).
Not to mention seafood is so good for you. This is because seafood is an excellent source of lean protein and provides omega-3 fats that is crucial to a healthy heart. Studies show that consuming more seafood also boosts your energy levels and reduces risk of heart disease. Even the healthiest diets in the world – Japanese and Mediterranean Cuisines – include a large portion of seafood in their diet.
So give this a try and see how even those who are skeptical about seafood will change their minds once tasting this dish.
- 7 eggs
- 1 cup shrimp (9 pieces)
- pinch of salt
- ½ cup bean sprouts (Optional)
- 1 stalk green onion, finely chopped (Optional)
- Sauce:
- 2 tbsp GF ketchup
- ¼ cup broth (Your Choice)
- 1 tbsp honey
- ½ tbsp GF soy sauce
- 1 tsp balsamic vinegar
- 1 tsp cornstarch
- Sweet and Sour Sauce: Mix all the ingredients together in a bowl. Microwave for 1 minute, stirring halfway through.
- Egg: Season shrimp with salt & pepper. Over medium heat, stir-fry for 30 seconds on each side until just pink. Remove and set aside.
- Add 6 eggs in a bowl with a pinch of salt. Whisk well.
- In a large non-stick skillet, spray a little cooking oil to prevent sticking (if you're using a non-stick you will need to oil it well). You can also do this in a smaller pan, just split the batter into two and make 2 separate egg omelettes.
- Turn the heat to medium-low and pour the egg mixture and swirl to cover the bottom of the pan.
- Arrange bean sprouts and green onion on top. Cover and cook for 1-2 minutes (the egg you should be nearly cooked through).
- Arrange the shrimp top and pour over 1 more beaten egg. Cover again and turn off heat. The residual heat will continue cooking the egg, so let it sit for 1-2 minutes. This will result in a "runny" egg foo young!
- Serve warm with sauce!

Thanks Alison! Balsamic Vinegar has a deeper, sweeter flavor and is the best substitute for Chinese Chinkiang Vinegar (black). Chinkiang Vinegar isn’t gluten free but balsamic vinegar is! This sweet and sour sauce is tastes really good!!!
