When I saw Zoe pour the can of white beans into the blender, I felt a pit in my stomach. I was not optimistic about this ONE. The last time we made apple cake out of chickpeas, it turned out so bad. We made the mistake of not tasting it before bringing it to a friend’s place to eat. I remember saying to Zoe, “We are never making cake out of beans again.”
Somehow, Zoe had managed to convince me that adding chocolate and peanut butter would make this work better! After my first bite, I grudgingly admitted “it wasn’t so bad”. You could still taste a trace of “beans”, but the predominant flavors were of chocolate and peanut butter. My boyfriend ate 4 pieces, saying they were “quite addictive!”
But the perfectionist in me still wasn’t satisfied. To be honest, it was good, but would I want to eat this everyday? Probably not.
In order to mask the smell of the white beans (which frankly is a lot stronger in the raw batter), we added cinnamon. To help fix the dense, “bean-y” texture we added oats and a little vinegar to react with the baking soda to give it a little “rise”. To make it healthier, we added applesauce and substituted the oil with natural peanut butter. After running through all the corrections to the recipe with Zoe, I let out a sigh of relief. It definitely sounded a lot better.
But the best was yet to come.
After these babies came out of the oven, we drizzled MORE peanut butter on top of each of these chocolate speckled muffins to make it more decadent. As Zoe snapped pictures of the runny glaze dripping over the edges, I marveled at the progress we had made.
Was I still skeptical about desserts made of beans? Not as much. Especially not after this one.
Just to be extra sure these were good, we did blind taste tests on a lot of our friends. They all unanimously agreed that it was absolutely delicious and YOU cannot taste the beans! Most of them were so shocked 🙂 It was so worth it!
Vegan, Protein-Packed, High Fibre and Oil -Free with Peanut Butter and Chocolate, this is my kind of a perfect treat!
- 1 cup GF Oats
- 1-14oz Northern White Beans
- ½ cup unsweetened applesauce
- 3 tbsp Peanut Butter (Natural)
- 2 tsp vanilla
- 1 tbsp apple cider vinegar
- 1 tsp baking soda
- ¼ tsp cinnamon
- ⅓ + 2 tbsp Chocolate Chips (GF & Vegan)
- Preheat oven to 350F.
- Drain the beans, rinse with cold water and dry thoroughly.
- Add all the ingredients (except the chocolate) into a blender and blend well.
- Fold in the Chocolate chips.
- Grease a mini muffin pan well. Divide 1-1.5 tbsp of batter into each. You should make 30.
- Bake for 10 minutes.
