Ready for Picnics

Standing outside the crowded walkway, I could hear the clattering of pans, the clinking of glasses and the loud chatter. I couldn’t wait to get seated. Day after day, my younger sister has been pestering us about going to eat at “Dishoom”. Day after day, we would walk pass the restaurant to see an infinite line of people waiting to be seated.
SO, we played it smart. We came early so we could finally get a seat. If it was as good as it claims to be, well, I was prepared to be astonished. Dishoom is known to be one of the finest Indian restaurants in London. They take Arab, Indian and British influences and incorporate it into their menu making them one of the most popular ethnic restaurants around town. Dishoom’s name is no stranger amongst my friends. One of my friends told me about this amazing breakfast spread she had catered by Dishoom. She showed me all her wonderful pictures of the delicious buffet of “healthy” breakfast options that I had never heard of, including this Bombay omelette. For some reason I was quite enraptured by the idea of making a spiced omelette. I absolutely love eggs, so the thought of making an “Indian” twist on it was quite fascinating.
Ever since we mastered our tandoori chicken recipe, Zoe and I have been obsessing over Indian food. The great thing about their cuisine is that a lot of their recipes can be easily adapted to for whole30 or paleo diet. They use a lot of natural spices to flavor their meats and vegetables, making it one of the only Southeast Asian cuisines that don’t use soy sauce or tofu or dairy (if you substitute with coconut milk or cashew cream). The dishes cooked outside usually used a lot of oil so the best way to enjoy guilt-free Indian food is to make it at home. If you’re gluten free, dairy free, or on a whole30 kick Indian food is definitely the way to go!I know “Bombay Omelette” isn’t the first thing you would think of when I say Indian food. But I must say it will probably be one of my favorites of all time. It is that good!
We made this gorgeous omelette 4 times in 2 days just to perfect the ratio of spices and the vegetables. We even analyzed Dishoom’s menu to ensure we incorporated all the listed ingredients into our omelette. I can’t even quite put into words how delicious this was. It was flavorful, spicy, textured, creamy and fresh – not like anything I’ve tasted before. The best thing is it takes only 15 minutes from start to end and before you know it you’ll be eating this beauty.
So apart from trying not to drool over the omelette, I can’t help but daydream about it. In my mind, I envision serving this outside in the garden, with beautiful porcelain and china. Fresh mangoes, spiced yogurt, spicy tomato salsa, homemade grain toast and butter, fresh tossed salad and our bombay omelette sounds like the prefect, elegant spring brunch. A beautiful, yet simple dish to serve your family, friends or even at a party!
Not to mention this would be a perfect addition to your breakfasts to make it even more interesting, healthy and exciting! Spices are so good for you so you will be getting your intake of vitamins and antioxidants.
- 2 eggs
- 1 garlic clove
- ¼ tsp garam masala (or ground coriander)
- ¼ tsp turmeric
- ¼ tsp ground cumin
- 1 green chili (we only put half)
- 4-5 cherry tomatoes, quartered
- 2 tbsp white onion, diced (or red onion/spring onions)
- few sprigs of coriander, chopped
- salt (to taste)
- In a non-stick pan, stirfry your onion, garlic, chili, chopped coriander.
- Add in the spices and salt (generously).
- Add cherry tomatoes and heat till warmed through.
- Spread out the mixture and pour over the beaten eggs. Turn down the heat to low, cover with a lid.
- Once it has set, fold over the omelette and serve with toast, salsa and greens.
