Hiyashi Chuka
I gasped as I saw the packet.
“Zoe they are green!” I squealed in excitement. I remember feeling the eyes of everyone in the store stare at me and instinctively covered my mouth rather apologetically.
We got looks of disbelief at our excitement over the discovery of “Green Miracle Noodles”. I was like a kid in a candy store.
These miracle noodles are phenomenal. Not only are they amazing in texture, but they also LOOK like ramen noodles. It makes for a great substitution for Japanese ramen noodles; for pasta dishes and even chow mein stir-fries!
Hiyashi Chuka vs. Soba Noodle Salad?
Today we are introducing a rather remarkable but lesser known Japanese summer dish called Hiyashi Chuka. You won’t believe how many “blank stares” I’ve gotten when I say I’m serving Hiyashi Chuka. Hiyashi Chuka is a delicious summer salad served with a soy-vinegar dressing. If you’ve seen our Korean Soba Noodle salad (which a favourite on the blog too) you pretty much have an idea of what hiyashi chukka is.
These two summer noodle salads are made from the same 3 components: noodles, toppings and a dressing. However, there are several key differences.
In contrast to our korean soba noodle salad that uses buckwheat noodles and a lemon-orange dressing, Hiyashi Chuka is made with ramen noodles and a classic soy-rice vinegar dressing. Hiyashi Chuka also is traditionally served with sweet corn, fresh tomatoes and ham. The corn adds a sweet crunch contrasting with the fresh tomatoes and savoury ham. It makes for a delicious light salad!
Summer Parties/picnics
Hiyashi Chuka is the perfect dish for a party or for a picnic. The best part is that you don’t have to cook anything at all. The most tedious part this repine was the dressing which took 5 minutes to throw together. It was the most stress free dinner party I hosted in awhile. For those of you who are watching your sugar levels and carb levels, this dish is perfect! The noodles are low in carbs, high in fibre and the dressing is also low in sugar (comparatively). It is a great way to get your veggies in because the dressing is so addicting.
I love storing the leftover dressing for an easy salad during the week where I topped off the remaining noodles with a bunch fo salad, eggs, tomatoes and sesame seeds!
If you haven’t tried this amazing noodle salad with sweet corn and fresh juicy tomatoes you are DEFINITELY missing out!
- Miracle Shiritaki Noodle (3 packs)
- 1 14oz can Corn
- Mixed Salad Leaves
- 1 cucumber, sliced into matchsticks
- 2 tomatoes, sliced into wedges
- 1 large chicken breast (or use deli ham. Omit for Vegan/Vegetarians)
- Garnish: Sesame Seeds, Seaweed, Sesame Oil
- Sauce:
- 3 tbsp GF Soy Sauce
- 4 tbsp Rice Vinegar
- 4 tbsp water
- 1 tbsp honey/maple syrup
- Mix all the ingredients for the sauce. Refrigerate until ready to serve.
- Poaching Chicken: Bring a pot of water to boil. Add in your whole chicken breast. Bring the water back to a boil. Cover and turn off the heat. Allow the chicken to "poach" for 20-25 minutes.
- Remove the chicken. Allow it to cool and shred.
- Prepare Vegetables. Drain the Noodles.
- Serve with nori seaweed, sesame seeds, sesame oil.
