“Here, take some bananas, use it to make some banana bread”.
I looked down at the bowl of cut up bananas and eagerly took some. I motioned to my sister to come help me. There were so many, I could barely balance them out.
My friend beside me chuckled, “he’s basically asking you to make some banana bread for him. You can make some for me too” I grinned at him. I loved banana bread and I was more than happy to have another excuse to whip up some more. I mean who doesn’t like homemade banana bread?
This particular recipe today is a very special one. I have never re-tested recipes so many times. From oat flour banana bread to vegan almond flour banana bread to light, fluffy buckwheat based bread – we have tried it all. I came up with this amazing idea to mix black sesame into banana bread this summer. Beautiful black seeds dotting the batter, adding a subtle fragrance and texture to this rather ordinary dessert. After 6 trials, I think we’ve nailed it. This is nothing like our light, fluffy coconut flour banana bread that I love, in fact, it is far denser but has much more body and texture (like a regular slice of banana bread). We wanted to something that resembled more of the hearty, rich banana muffins I use to love when I was younger. So many of you have been wanting this recipe and so here it is – our little asian twist on a classic. Something fun, something impressive and something delicious!
**Oat flour alone does yield a “slightly” gummy texture, but for easy purposes we only tried to stick using one flour. For an even BETTER banana bread, we would suggest using 1 cup almond flour and 1 cup oat flour!**
- 2 cups oats (RECOMMENDED 1 cup of ground oats + 1 cup almond flour)
- 2 tsp GF baking powder
- 1 tsp baking soda
- 3 ripe bananas (340g)
- ⅓ cup honey
- 2 eggs
- 1 tsp vanilla
- 2 tbsp black sesame seeds
- 3 tbsp chopped walnuts
- Topping (Optional):
- ½ Banana, sliced lengthwise
- Lots of Black Sesame
- Add 2 cups of oats into a blender and blitz until fine grains/powder. Remove and set aside. (or alternatively 1 cup of oats + 1 cup of almond flour).
- Preheat oven to 350F.
- Mix together the wet ingredients. In a separate bowl, stir together the dry ingredients (except for black sesame seeds).
- Combine both mixtures. Stir in chopped walnuts and sesame seeds.
- Line a loaf pan with parchment paper and pour the batter in.
- Baked or 45-50 minutes until cooked. Allow it to cool completely before slicing.
- Optional Decoration: Slice a banana lengthwise and lay one half on top of the batter (cut side up). Sprinkle black sesame seeds on either side
