Keto/ Paleo Friendly. 15 minutes. Addictive. Meal Prep Worthy.
I’m so glad I finally get to sit down on the comfy armchair my sister has in her living room. It feels kind of strange to have some peace and quiet to myself – no dashing out the door to class, no clankering of kitchen utensils because everyone is trying to make dinner, no visitors coming in and out. It’s just me. Alone.
I’ve often find comfort in the rare moments of solitude, for many reasons: long warm showers, reading books and warm milk before bed…the list is endless. I know I sound like an old grannie, but small simple habits, routines can really make a world of a difference. In the spirit of self care and solitude, I’ve been really focusing on making my meals simple and manageable. Hence, I’ve resorted to eating the same thing everyday. Its probably not for everyone, but I am a stickler for routine. There’s something so comforting about familiarity. It also makes life so much easier because it takes off the pressure of decision making, which is not my forte.So many of our readers have been wanting to see basic, simple everyday meals. Today I’m going to take the liberty to share one that I’ve been absolutely loving and also so embarrassingly simple. It’s so simple that I almost didn’t want to post. It probably doesn’t look or sound all that attractive, but you’ll be surprised at how delicious this really is. My dad always taught me go light on the seasoning, “simplicity is always brings out the real flavor of food” and so I definitely live by that philosophy. A little bit of salt, sugar, white pepper and BINGO – you have something out of this world!
I love having this on its own or wrapped in lettuce. My favorite way is to pack this in my little Japanese bento box with some stir-fried veg when I’m on the go. I don’t think I’ll ever get over the excitement of opening the box especially because it smells so good! I can guarantee everyone/anyone would be jealous: The meat is juicy and flavorful even after its been left overnight. Both Zoe and I look forward to our packed dinners because its simple, delicious and just stress-free!
- ½ lb Ground Turkey (90% Lean) - or ground pork, ground chicken
- 1 tsp garlic, minced
- 1 scallion, finely chopped
- ½ tsp salt
- ¼ tsp coconut sugar
- ⅛ tsp white pepper
- Coriander/ cilantro
- Mix all the ingredients together until thoroughly combined.
- In a hot non-stick pan, add the marinated turkey mince. Cook over medium until the turkey is no longer pink (be careful not to overcook). Transfer to another plate. Serve immediately.
- You can also marinate the turkey earlier and store in the fridge up to 2 days. Take out and cook it whenever you need it!
- Serve with romaine lettuce as lettuce wraps, or serve on top of rice!
