HAPPY Thanksgiving!
2020 is definitely the year to appreciate every little thing in our life – more time with family, health and safety. Thanksgiving is definitely the perfect reminder to express gratitude. Prior to coming to the US, I never understood why thanksgiving was so important. I, for one, actually thought that everything you ate in Thanksgiving (Turkey, stuffing, pies) was what you actually eat for Christmas (apparently you eat ham not turkey in Christmas. I was clearly very unfamiliar with this holiday, let alone know how to appreciate it.
I use to treat thanksgiving as just an extra weekend off. I remember one of my very first Thanksgiving’s here in the US my twin and I were invited to a delicious Thanksgiving meal. It was nothing like I had imagined it to be. We were particularly intrigued by the sweet potato casserole: marshmallow and brown sugar melted on top of mashed sweet potato creamed with butter and milk! I had only ever eaten steamed/char grilled sweet potatoes for breakfast or snacks but never ever with marshmallows or sugar! It felt like I was eating dessert! We definitely stuffed our stomaches full of sweet potato because I can never say no to it.
As we made our way home, I remember noticing how quiet everything was. The sky was pink and red indicating the sun was about to set. On a normal day, the streets would be bustling with cars, honking and traffic (Yes, even in the small college town), but that day it just felt like a ghost town. It was such a rare sight.
I recall as I got off the car how cold it was. I shivered as the wind beat against my exposed skin. I hugged my jacket tighter and sprinted to the main door. As I rummaged for our key and then watch Zoe rummage through her pockets, I realized we had both forgotten our KEY. My heart dropped. Zoe’s face turned pale. Our roommate had gone home and there was barely anyone at the dorms! The biggest problem was our key was an electronic key, so I couldn’t just call up a locksmith to just break open the door. I honestly didn’t know what to do. My friend had left. We were freezing and it was getting dark.
We stood there trying to think every solution possible. Shivering, we both desperately desperately said prayers in our hearts. We decided to circle around the complex hoping someone would decide to magically come home earlier. 60 mins passed. We were desperate. Suddenly a rather strange thought hit. We saw a light flicker in one of the ground floor balconies of our complex. SOMEONE was home! Out of desperation, we climbed over the surrounding garden beds and into the girls balcony. I almost gave the poor girl a heart attack as she saw us standing there. Thankfully she opened the door to two strangers. We quickly explained our situation and she let us go through her apartment into our complex. I had never been more desperate and more grateful for someone to be home. She had been the answer to our prayers! Thankfully we had left our apartment door unlocked and was able to spend the evening safe and warm.
Although my parents aren’t here, but I’m grateful to have my sisters, my fiance, my brother in law and my fiancé’s family around here. I’ve been able to spend many more wonderful thanksgiving’s here with them. Today we are introducing a simple, yet delicious dessert. CINNAMON ROLLS muffins. Since cinnamon rolls take a while to make we have infuse the same flavors into muffins form. That way not only is it SO MUCH EASIER TO MAKE, but it tastes absolutely decadent. My family absolutely loved it. And although this muffin is not Thanksiginvg food but it is the perfect fall warm treat to have.
Best of all this are guilt -free, low in carbs, zero fat and much more nutritious that the originals! These babies can be done in less than an hour to satisfy your cravings!
- ½ cup coconut flour
- 4 eggs
- 4 tbsp non-dairy yogurt **(see note)
- ½ tsp baking soda
- 4 tbsp maple syrup
- Pinch of Salt
- Topping:
- 2 tbsp maple syrup
- 11/2 tbsp cinnamon
- Preheat oven to 350F.
- Prepare a baking tray with 8 muffin liners.
- Prepare the topping: Mix cinnamon and 2 tbsp of maple syrup in a small bowl. Set aside.
- In another bowl, add coconut flour, baking soda and salt. Mix well.
- Crack in 4 eggs, yogurt and the remaining maple syrup in. Blend well.
- Place 2 tbsp of batter in each liner. Drizzle half of the topping.
- Divide the remaining batter over each one. (I like to use my fingers to spread the batter evenly over the muffin).
- Drizzle the remaining toppings over. Use a toothpick and swirl each batter.
- Bake for 18-20 mins or until toothpick inserted will come out clean.
